Black Bean Soup

cation is always hectic for me.  You can practically count me out for at least three weeks when I go on a week long vacation.  I need a week to prepare for the vacation, then I need to go on the vacation, and then it takes a week to get back into the swing of things.  So, this time since I have a baby who needs to eat right when I get back-she doesn't care if I have been on vacation and don't have time for the grocery store-I had these ingredients ready to go.

Black Bean Soup

10 pieces smoky bacon (chopped)
1 onion (chopped)
6 garlic cloves
1 can chicken broth
1 can chopped tomatoes
2 T. ketchup
2 t. worcestershire sauce
4 cans of black beans (rinsed)
1 T. chili powder
1 lime
cilantro

Chop the bacon, onion, and garlic.
Next brown the bacon in a medium high pan.  Then throw in the onion, garlic, broth, tomatoes, ketchup, worcestershire sauce, and the black beans.
Add water if needed until beans are covered.  Salt and pepper.  Bring it all to a boil, then simmer for 15 minutes.  Turn off the heat and add the chili powder, the juice of one lime and a handful of chopped cilantro.
This recipe is so easy and a good back up plan.
